GREASE TRAPS are a form of wastewater pretreatment. Found in
all food service establishments these traps separate out fats,
oils and greases from wastewater, from utilities such as
dishwashers, sinks, and floor drains etc.
Designed to slow the incoming wastewater, grease traps
cause grease in the wastewater to congeal and float to the top
of the trap whilst solids settle to the bottom of the trap.
After a period of time the trap becomes full and requires
emptying, to prevent blockages and to meet safety and hygiene
standards.
